Chickpea Cauliflower Green Bowl

1 ripe avocado, sliced

1 lime, sliced

1 cup spinach, chopped

2 tbsp walnut, chopped

1 tsp sesame seeds

2 tbsp lemon juice

1 tsp olive oil

1 cup cauliflower florets, diced

2 tbsp flour

1 tomato, cut into wedges

1 can chickpeas, drained

1 tsp chili flakes

2 tbsp basil leaves

Salt and pepper

2 tbsp BeVego Gingerbread Protein Powder




  1. Combine the flour, salt, pepper and protein powder. Coat the cauliflower in the mixture.
  2. Add wax paper on a baking sheet. Add the cauliflower and bake them for 10 minutes. Stir once and bake for another 5 minutes.
  3. Coat the chickpeas in chili flakes, salt and pepper.
  4. Assemble the spinach, avocado, chickpeas, tomatoes, basil, cauliflower in two bowls.
  5. Add walnuts on top. Add some olive oil on top. Add seasoning if needed. Serve.
