Chickpea Cauliflower Green Bowl

Ingredients:
1 ripe avocado, sliced
1 lime, sliced
1 cup spinach, chopped
2 tbsp walnut, chopped
1 tsp sesame seeds
2 tbsp lemon juice
1 tsp olive oil
1 cup cauliflower florets, diced
2 tbsp flour
1 tomato, cut into wedges
1 can chickpeas, drained
1 tsp chili flakes
2 tbsp basil leaves
Salt and pepper
2 tbsp BeVego Gingerbread Protein Powder
Instructions:
- Combine the flour, salt, pepper and protein powder. Coat the cauliflower in the mixture.
- Add wax paper on a baking sheet. Add the cauliflower and bake them for 10 minutes. Stir once and bake for another 5 minutes.
- Coat the chickpeas in chili flakes, salt and pepper.
- Assemble the spinach, avocado, chickpeas, tomatoes, basil, cauliflower in two bowls.
- Add walnuts on top. Add some olive oil on top. Add seasoning if needed. Serve.
